Guest guest Posted November 3, 2007 Report Share Posted November 3, 2007 Curried Zucchini and Apple Crockpot Soup 1 1/2 lbs. zucchini, sliced 2 large apples, peeled, cored, chopped 2 large onions, diced 1/2 cup rice 4 cups vegetable stock 2 tsps. curry powder 3 tblps. milk per serving Mix curry powder and stock together. Place all of the other ingredients into the crockpot. Pour the stock over top. Cover and cook for 8 to 10 hours on Low. When ready to serve, puree soup in a blender or use a hand held device in the crockpot, saves washing another item. Add 3 tbsps. milk per serving and enjoy. Serves 8 to 10.
