Fresh Herbs and Garlic Potato Salad

I don't always have eggs unless I'm going to bake. I

made this up and you will enjoy it too.

 

Fresh Herbs and Garlic Potato Salad

 

2 lbs of red potatoes, peeled and cut into decent

sized chunks

2 cloves of garlic squeezed

2 to 2 1/2 Tbls. lemon juice fresh or bottled

1/3 heaping cup mayo, I use Vegenaise

1/4 cup chopped fresh chives or use a mixture of green

oinion tops, cilantro, parsley, little dill, lemon

balm or whatever your favorite herbs are. Mix and

match if you wish

Salt to taste, you might not need any

 

Steam the potato chunks until fork firm tender, don't

over steam them. Cool slightly. While potatoes are

steamimg, mix the mayo, garlic, lemon juice, and

herbs. Add salt to taste. Use a bit more mayo if

needed.

Toss mayo mixture with potatoes. You can chill or eat

warm. It's delicious either way.
