Oh Diane, I love your layering of foods. I had forgotten all about doing that.

I'm glad you sent your review of this recipe of Petro's and how you planned to

enjoy it all week. Sounds delicious!

Review: Armenian Pilaf from Petro

 

 

This is yummy! I only used 1 Tbs butter and I used brown basmati. It

came out so good. It's my lunch this week, layered with greens,

hummus and topped with spicy olives. Thanks Petro.

Armenian Pilaf

 

1 cup rice

1/2 cube butter or margarine

2 cups broth

1/2 cup spaghetti, uncooked

add your favorite seasoning or herbs

 

Melt 2 to 3 tablespoons of butter in a heavy pan.

Break spaghetti into 1-inch pieces and brown. Add rice

and stir until rice begins to pearl or look whiter.

When 1/3 has pearled, add broth, seasoning or herbs

and remaining butter. Bring to a boil and then turn

down to simmer. Simmer, covered, 20 to 25 minutes.

Uncover and stir. Adjust seasonings. Cover and let

rest in a 250 degree oven or on warm on top of stove

10 minutes to 1 hour. Fluff and serve.

heehee it's because I'm too lazy to carry multiple containers to work

& back & then wash them lol. It's not just work tho' I eat like that

at home too when DH is not around -- all in one bowl. Less to wash

yay!! Petro's recipe is yummy tho' I hope you get a chance to try it.

So easy too, even my sis said she would try it.

Pilaf is a family favorite. I never have leftovers...guess I should double the

recipe. With sides of vegetables and cooked apples...mmmmm.
