Fruit With Wine Marinade

 

1 cup pitted canned red cherries, drained, juice reserved

1 cup diced fresh or canned orange sections or mandarin orange

1 cup fresh pineapple or pear chunks, grapes, or other fruit in season, diced

into bite sized pieces, or use frozen

 

Marinade:

1/2 cup dry red wine

1/4 cup cherry juice

1/4 cup grape or currant jelly

1 tablespoon lemon or lime juice

1/8 teaspoon salt

 

Heat wine and cherry juice to simmering; add jelly and stir until melted.

Remove from heat and add lemon or lime juice and salt. Cool. Drain fruits

and combine in a bowl. Pour marinade over fruits and cover. Chill several

hours. Serve heaped in cocktail glasses with some marinade poured over

fruit.

Makes 6 servings.
