Guest guest
Cardamom is very strong and pungent if you remove the seeds from the pods and grind them with a mortar and pestle. It is worth the effort. I do this. Once you grind them they start to weaken in flavor and scent, this is why I usually use pods instead of ground in a jar. You can buy pods in jars in the spice isle of you are lucky. If not then order from Penzey's. Do not buy the black cardamom pods if you are going to use for sweets. They have a smokey taste and go in spicy Indian dishes. If you want me to send you some give a holler. Do you use groiund cardamom? Donna Sent via BlackBerry from T-Mobile akfral Thu, 1 Nov 2007 09:06:00 cardamom~Donna I was talking to my mom about the rice I made (trying to interest her in food since her taste buds are all out of whack) and she reminisced about something her mom used to make that she insisted on getting cardamom seed and extracting her own for the recipe (escapes me what it was). Do you ever do this? Where do you find cardamom seeds? Mom said they were really hard, grandma would wrap them in a towel and pound them with a hammer. I did in the Thai rice....it is ground from the grocery store and is old. The flavor is probably gone. I'll replace it next time i go to the bulk food store. I'm going to sneak into the kitchen store today, shhhhh don't tell DH. Guest guest
Donna, I get my cardamom from the place called " little India " in the town of Artesia. They have really fresh spices (cardamom and many others) and their spice/grocery stores are a delight to visit just from the aroma alone! They are also really inexpensive. I should take a trip there soon myself, I always find something else interesting that I have not tried yet....for those of you not living in Los Angeles, any Indian grocery store should have this spice. , thelilacflower wrote: > > Cardamom is very strong and pungent if you remove the seeds from the pods and grind them with a mortar and pestle.
