Last year I had a good one. Roasted the seeds and baked the pumpkin with some butter, brown sugar, cardamom and cinnamon and it was hardly stringy at all. Was going to actually do something this year based on reading here but my chuncks of pumpkin were very much like a spaghetti squash, you could flake it into strings (wanted pie). He then left to run some errands. She and her visiting cousin buried the pumpkin in the backyard and made a pie from canned pumpkin. At dinner that night, he raved about how much better the fresh pie was than from a can. Conspiracy smiles went around the table. She never told him.
