Guest guest Posted October 31, 2007 Report Share Posted October 31, 2007 Potato Greek Oven Fries 3 tbsps. dried oregano, crushed 1 1/2 tsps. black pepper 3/4 tsp. salt 12 6 oz. each, potatoes, scrubbed olive oil 1/4 cup cooking spray as needed 3/4 cup malt vinegar Combine oregano, pepper and salt, reserve. Cut potatoes lengthwise into 8 wedges each; submerge in ice water for 30 minutes. Toss potatoes with oil; arrange skin-side-down on a cooking oil spray coated sheet pan. Sprinkle reserve oregano mixture over potatoes. Bake at 400 degrees for 35-50 minutes or until potatoes are browned and tender. Sprinkle with vinegar. Serve hot. Serves 24. It's one of my favourites on fries, too. The french fry trucks in the city always have it (if they are worth visiting anyway) It's got a very earthy flavour and it is brown... like clear Guinness (also very malty).
