Moroccan seasoning - Sam

Hi Sam,

This is from my Classic Vegetarian Cooking from the Middle East &

North Africa by Habeeb Salloum:

 

ras el hanout (the head of the shop)

 

1 Tbs ground corriander seed

1 Tbs ground cumin

1 Tbs ground ginger

1 Tbs black pepper

1/2 tsp mace

1/2 tsp nutmeg

1/2 tsp allspice

1/2 tsp cardamom

1/2 tsp tumeric

1/2 tsp cinnamon

1/4 tsp ground cloves

1/4 tsp cayenne

 

Combine all ingredients. Store in a tightly covered container. Makes

about 1/3 cup.

 

Delicious!

lot of spice mix recipes that can save $ & time searching stores :)
