Funny you should mention - we just had a discussion on flax a little over a week ago ;=) (If you go the the webpage and click into Messages on the left hand side menu, then go to the top right and put the word flax into the search box, you should be able to see how that went.) But the short answer is, most of us like to refrigerate flax oil and flax seed because these oily seeds and of course the oils themselves can go off a bit - flax oil is particularly fond of doing this, and it's not too nice rancid. Some people keep enough flax seed in the fridge for a week and freeze the rest in batches until they need it. The seeds should be ground before eating if you are to get the benefit of them. Why will you be taking just one-quarter teaspoon of seeds? Just to try it? They taste great, as you will probably know by now.
