PURE CHRISTMAS RECIPES CRUMBLY OAT AND ORANGE CAKE Dairy free, egg free, suitable for vegetarians and vegans Serves 10 Cooking time 35 minutes Preparation time 20 minutes Baking tin 2 x 7 inch (18 cm) round tins Oven temperature 190oC, 375oF, Gas Mark 5 Ingredients: For the cake: 125g/41/2oz Pure spread 125g/41/2oz Wholemeal flour 3tsp Baking powder 1tsp Nutmeg 200g/7oz Porridge oats 100g/3 1/2oz Brown sugar 150ml/5floz Soya milk 75ml/21/2floz Orange juice 2 tbsp Marmalade 125g/41/2oz Carrot, finely grated For the icing: 125g/41/2oz Pure spread 200g/41/2oz Icing sugar 1tsp Orange juice Crystallised orange slices The Valley Vegan...............Peter H How much free photo storage do you get? Porridge oats are oatmeal? Is it minute or the long cooking oatmeal? Icing sugar is confectioner's or powdered sugar? If it is I haven't found one that is vegan here, but I will look harder. I rarely bake so don't use it anyway, but this sounds good. Then on the directions for the cake...you mix all of the cake ingredients and blend til smooth? Since it says "crumbly" in the name I wondered. You grease the pans? I want to try this as it sounds delightful for the morning coffee binge. Porridge oats are bigger than pinmeal oats, so the mixture would be crumbly.I think that it is powdered sugar - the white stuff, dont know if vegan though it may be if cane or beet?!? dont know............Frag will know. You can line your cake tins, it realy is up to you and whether you have non stick ones or not. I use the margarine .
