Everyone loved this last Thanksgiving.

 

Sweet and Spicy Sweet Potato Bake

 

4 medium sweet potatoes, peeled, and cut into 1 inch

cubes

1/4 cup oil

1/4 cup brown sugar, can use more or less

1/2 to 1 teaspoon chili powder, to taste

1 teaspoon salt or to taste

black pepper

1/4 teaspoon cayenne pepper

 

In a resealable plastic bag, toss cubed sweet potatoes

and oil; add the rest of ingredients; toss well to

coat. Transfer to a greased baking dish (large enough

to hold the potatoes in one layer).

Bake, uncovered at 400 degrees for 40 to 45 minutes,

or until sweet potatoes are tender, tossing with a

wooden spoon about every 15 to 20 minutes. Yields 6 to

8 servings.
