Guest guest Posted October 26, 2007 Report Share Posted October 26, 2007 Harvest Bread 1 1/2 cups finely chopped, dried apples 1 stick (1/2 cup) butter 2/3 cup sugar 2 eggs 2 cups sifted all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 3 ounces Cheddar cheese, shredded (3/4 cup) 1/2 cup chopped walnuts Well grease a loaf pan and set aside. Preheat oven to 350*. Place apples in saucepan; add sufficient water to cover about 1/2 inch over the apples. Cook apples, covered, for 25 minutes. (Or avoid this entire step by using fresh, peeled apples and about a quarter of a cup of applesauce.) Once cooked, drain apples. Cream butter and sugar together until light and fluffy. Add eggs and beat well; add drained apples, cheese and nuts. Sift or stir together the flour, baking soda and salt and add to the apple mixture, stirring in until just blended. Pour into loaf pan and bake 50 to 55 minutes, or until a toothpick stuck in the center of the loaf comes back dry. Cool 10 minutes in the pan, then turn out on cooling rack. Makes 1 loaf.
