Guest guest Posted October 25, 2007 Report Share Posted October 25, 2007 Garbanzo Stove Top Casserole 1 tbsp. oil 1 onion, medium sized, chopped 1/2 green pepper, seeded and diced 1 clove garlic, small, optional 1/2 cup canned tomatoes 1/2 tsp. salt pinch oregano 1 cup garbanzo beans, cooked Heat oil in a pan. Saute onion and green pepper over low heat until onion is transparent. Add remaining ingredients. Simmer, stirring occasionally, for 15 minutes or until most of the liquid is absorbed. Serves 2.
