Egyptian Biram Ruz - North African

2 cups long grain rice

2 cups whole milk

2 cups heavy cream

1/2 teaspoon salt

1 1/2 teaspoon butter

Heat milk and heavy cream to a light boil.

Put rice in casserole dish, adding hot milk and cream.

Stir in salt.

Bake at 400 degrees for 35 minutes.

Just before done baking, cut butter in very small

pats, spreading it on top of the rice.

Allow to cook for an additional 20 minutes or until

the rice has browned on the top.

Serves: 8

ChupaNote: this dish is usually made for celebrations,

such as the feast at the end of Ramadan, or weddings.

My family adds raisins, or dried cherries (to taste)

when combining the rice and milk. We also add 1 T.

cinnamon at the same time. We also replace the salt

with 1 T. sugar. That is Auntie Nabila's recipe
