Guest guest Posted October 25, 2007 Report Share Posted October 25, 2007 Potatoes equal comfort food for me and this is such a fabulous recipe I thought it could stand a repost: Black-eyed Peas 'N Potatoes 2 Tbsps. cooking oil 1/4 tsp. mustard seed 1/4 tsp. cumin seed 1/4 c. chopped onion 2 cloves garlic, minced 1 can black-eyed peas 1 large potato, peeled, chopped 1/4 tsp. ground ginger 1/4 tsp. ground turmeric, optional dash ground red pepper In skillet heat oil. Add mustard seed. Cover and cook until seeds begin to pop. Remove from heat. Stir in cumin. Add onion and garlic. Cook and stir until onion is tender, not brown. Stir undrained black- eyed peas, potatoes, ginger, turmeric and red pepper. Bring to boiling. Reduce heat. Cover; simmer 15 minutes. Serves 2-3. I have made a number of variations to this recipe. Today I added a handful of frozen petits pois, some chopped pak choy and a tablespoon of tomato paste. Served it with brown basmati rice and a whole load of steamed veggies.
