Yogurt with Garlic Sauce - North African

2 cup plain yogurt

salt, to taste

2 chopped garlic cloves

black pepper, to taste

olive oil, to taste

 

 

Put the yogurt in a bowl. Beat gently with a fork or

whisk until smooth and creamy. Add all the other

ingredients. Beat to mix. Cover and chill until

needed.

 

Makes 2 cups.

ChupaNote: yougurt sauces are common all thru North

Africa. They vary from village to village; and cook to

cook. Sometimes more yougurt, or more oil, or more

garlic. Sometimes with vinegar or lemon juice.

Sometimes with mint, or cilantro, or parsley.

Sometimes with a spice mix; ras el-hanout, or harissa,

or zaatar.
