Guest guest Posted October 24, 2007 Report Share Posted October 24, 2007 I saw that there are a few Black Bean soup recipes in the files, but I really like this one--it's easy, and vegan. I've made it for years, even during my meat-eating days! 1 T olive oil 2-3 cups chopped onion 2 tsp ground cumin 2 tsp salt 1 medium carrot, diced 2 Tbls minced garlic 1 bell pepper, diced 5 cups black beans, soaked and cooked (use canned beans in a pinch!) 1 1/2 cups orange juice black pepper to taste cayenne pepper to taste 1 14-oz can diced tomatoes Saute the onion, cumin, salt, carrot, and 1 Tbls garlic in the olive oil over medium heat, until the carrot is tender. Add the bell pepper and the rest of the garlic and saute until everything is very tender, about 10-15 minutes. Transfer to a large pot along with the cooked beans. (I usually just add the veggies to the pot I cooked the beans in). Mix in the orange juice, both peppers, and the tomatoes. Optionally puree some or all of the soup in a blender, then return to the pot. Simmer over low heat for another 10-15 minutes (or longer, it just gets better).
