Guest guest Posted October 22, 2007 Report Share Posted October 22, 2007 @@@@@ Libyan Eijjat Kausa - North African Veg Patties 2 zucchini 3 eggs 1 cup of flour, white or whole wheat 1 large onion 1 large bunch cilantro 1 teaspoon salt 1 teaspoon chilli pepper, or more to taste 1 teaspoon baking powder oil Shred or mince the following: the zucchini, cilantro and onion and mix them. Add the flour, salt, baking powder, chilli and 3 spoons of water. Mix with eggs till the mixture is moderately combined. Try not to overmix. Fry them until it turn into gold colour. Serves 4. ChupaNote: you can bake these as well; 350 degrees for 10-15 mins, until the edges brown. Check doneness with a toothpick. If you have a muffin-top baking tin, it is perfect for this recipe.
