INGREDIENTS: 2 hard boiled egg yolks 1/2 c butter 1/4 c sugar 1 c all-purpose flour 1 c corn starch 1 tsp vanilla extract METHODS: Hard-boil the eggs and leave away the egg whites. (OR break the egg carefully, save the egg whites for other baking/cooking use, plastic wrapped the egg york in a microwave container and microwave 10 seconds). Crumble the egg yolks and strain through a sieve. Set aside. Bring the butter to the room temperature. Add in sugar and beat until it has become thick, pale, and fluffy. Add in egg yolks, stir to combine. Sprinkle the vanilla extract and well mix. Sift the flours into the above mixture. Fold gently with a rubber spatula, just until the flour is incorporated and become a dough ball. Don't over work on it. Wrap and chili for at least 2 hours. Take out the dough and shape them into the small balls. For better results, store the small balls back to the fridge for 1 hour. Flatten a bit with your palm and place them in a baking tray lined with a baking paper. Bake in a preheated 325F oven for about 15-20 minutes until golden in colour. For better results, remove the cookies from baking sheets and cool on the wire rack. Store the cookies in an air-tight container.
