You roast the cubed butternut squash with some oil, salt, pepper. After it has cooked, you pour the marinade with lemon juice, fresh chopped garlic and thinly sliced red onion and let sit for about 20 minutes then serve. I cooked slightly longer until lots of edges were browned, reduced the oil. The squash was wonderful after roasting but fantastic with the zingy/spicy marinade. Very quick, most time spent peeling the squash. I also roasted the seeds. YUM! The recipe says copyright. I'm assuming I can't post the recipe here?
