Time for a hot bowl of 'creamy' chowder?

TNT Vegetarian- Vegan friendly

My experiment for the day. It not only looks pretty it tastes great.

 

Broccoli Carrot Chowder

 

2 cups fresh broccoli-chopped

1 cup baby carrots -finely sliced into rounds

1 small onion finely diced

2 cups plain soy milk

2 tablespoons flour

3 tablespoons Smart Balance

Sea salt and white pepper to taste

 

Steam vegetables or boil in a small amt. of water until tender

Prepare the roux

Melt Smart Balance in small sauce pan. Med.heat

Add flour and simmer for a minute or two

Slowly stir in soy milk ..I use a wire whisk

Continue stirring until roux is thick and creamy

Add to vegetable mixture and serve.

 

Makes apx. 3 -4 8 oz. servings
