INGREDIENTS: 1 c unsalted butter 6 oz unsweetened chocolate, chopped 4 large eggs 2 c sugar 1 tsp vanilla extract 1/2 tsp salt 1/2 c all purpose flour 1/2 c coarsely chopped walnuts (optional) 48 pieces chocolate chunk (optional) METHODS: Preheat oven to 325F. Melt butter and chocolate in heavy medium saucepan over low heat, stirring until chocolate mixture is smooth. Cool. Using electric mixer, beat eggs and sugar in large bowl until light and fluffy. Beat in chocolate mixture, vanilla and salt. Add flour; beat just until blended. Butter the wells of a mini-muffin pan with nonstick spray or use mini cupcake liners. Fill each well 3/4 of the way, add a piece of chocolate chunk on top (optional) and push on individual add-ons as desired (optional - nuts, candied fruit, colored sprinkles). Cook the mini muffin pan for 25 minutes for chewy brownie bites. If using a regular sized 9 " x13 " pan bake for 35-40 minutes. Pop them out and enjoy!
