Guest guest Posted October 19, 2007 Report Share Posted October 19, 2007 Cheesy Tortilla Wedges From " The Complete Quick and Hearty Diabetic Cookbook " 2nd Edition 6 lg. corn tortillas 1 c. shredded fat-free cheddar cheese 7 T. shredded reduced-fat Monterey Jack cheese 1/2 c. green chiles 1/2 c. sliced pitted black olives Preheat the oven to 400 degrees. Place tortilas on cookie sheets and bake 5 to 7 minutes or until edges start to curl. Turn tortillas over; top with the 2 cheeses, chiles, and olives, spreading to the edge. Bake an additional 3 minutes or until cheese melts. Cut each tortilla into 6 wedges and arrange on a platter.
