Guest guest
I really like this on veggie sub sandwiches along with caramelized onions. I often substitute an orange or yellow pepper for the green pepper or use all red peppers. Really Simple Sweet Red Pepper Relish 2 large red bell peppers 1 medium green bell pepper 1 medium red onion 1 celery stalk 1/4 cup plus 2 tablespoons sugar 3/4 cup cider vinegar Put roughly chopped red pepper, green pepper, onion and celery in food processor. Pulse until the vegetables are coarsely chopped. Transfer to a colander and let drain for 10 minutes. (yield: 2 to 2 1/2 cups) Combine sugar and vinegar in a medium saucepan. Bring to a boil over moderate heat and cook for 2 minutes. Add the drained vegetables, return to boil and cook for 2 minutes. Spoon into serving dishes or storage containers and let cool. Store in refrigerator. Jenn B aka Mom2Sam and Tiny Make_Your_own_Mixes Make_it_Kid_Recipes Check them out
