Guest guest Posted October 18, 2007 Report Share Posted October 18, 2007 @@@@@ GOLDEN PILAF - Turkish 1 small onion, finely chopped 2 tablespoons butter, or oil 2 cups long grain rice 1 tablespoon Madras curry powder 1/3 cup dried apricots, cut into 1/4 inch strips 1/3 cup golden raisins 4 cups good stock, hot 1/2 cup toasted slivered almonds salt and pepper to taste 1/3 cup minced parsley, or mint Heat butter in a heavy saucepan and sauté onion until golden; add rice and stir and sauté until opaque (2-3 minutes). Add curry powder, apricots, raisins and hot stock. Bring to a boil and stir to combine. Reduce heat to low, cover and simmer for 15 minutes. Let stand another 5 minutes to absorb any remaining moisture. Fluff with a fork, adding almonds, salt, pepper and parsley. Serve 8 as a side dish.
