Whipped Potatoes with Roasted Garlic 1 head garlic 1 tablespoon extra-virgin olive oil 1 pound russet potatoes, scrubbed, peeled and roughly chopped 1/2 cup whole milk 4 tablespoons butter or marg. salt and freshly ground pepper freshly grated nutmeg Preheat the oven to 350 degrees. Place the garlic on a sheet of aluminum foil, and drizzle with olive oil. Wrap up, place in the oven, and roast for 25 minutes. Remove, squeeze the roasted garlic from its skin, and set aside. Meanwhile, place the potatoes in a large pot, and add enough cold water to cover. Bring to a boil, lower the heat, and simmer until soft and tender , about 15 minutes. Drain real well and mash, and add the milk and butter, mash more. Season with salt, pepper and nutmeg, and mix with a wooden spoon. Stir in the roasted garlic, and serve. Serves 4.
