Oven Roasted Potato Chips with Rosemary

 

2 large baking potatoes, scrubbed

2 tsps. freshly chopped rosemary

coursely ground salt to taste

pinch chili powder

3 tbsps. extra virgin olive oil

 

Preheat oven to 400 degrees.

Slice potatoes into 1/8” thick rounds and transfer to

a large bowl. Add the remaining ingredients and toss

very well until evenly distributed.

Arrange potatoes in a single layer on baking sheets

lined with parchment paper or oiled and bake at 400

degrees for about 25 to 30 minutes or until golden

brown and crisp. Turn trays often and remove any chips

that have browned sooner than others. Cooking time

will vary .
