Guest guest Posted October 16, 2007 Report Share Posted October 16, 2007 I cooked a spaghetti squash today for the first time. I cut one in half and cooked it in the microwave. It turned out well, I loved it. My daughter took a bite and proclaimed it was still 'crunchy'. And I have to admit it was. I thought I cooked it more than long enough and it flaked out of the shell with a fork very nicely. Is this how spaghetti squash is or should I have cooked it differently? Also I made Untidy Josephs yesterday from the kids files. I thought they were excellent! My daughter even ate half a one. lol She is iffy about sloppy joes anyway. The only thing I changed from the recipe is I didnt have pinto/chilli beans. So I used black beans. And I mashed them so they wouldn't look quite so 'beany' in the bun. (My daughter has issues with consuming beans) But I thought they were wonderful. The texture was good and everything. And as a side note my daughter who is in 3rd grade has a friend who is trying to become a vegetarian! Her family isn't but this girl at the age of 8 has decided to quit eating meat.
