Someone here gave me a great a great tip on making great simple delicious cabbage. Wash your cabbage and chop it. In a skillet add some butter or Smart Balance spread, let it melt over med heat. Add your chopped cabbage(no water) in to the skillet. Add a little salt, stir well and cover. Stir every couple of minutes. Eat when it is just gotten tender and and is still brightly colored. Another way a friend of mine does her coleslaw is so different from any that I've ever had before. She takes 1 head of cabbage and shredds it. Then in a bowl stir together 1 c. sugar and 1 c. lemon juice. Add to the Cabbage in a large bowl and mix well. It is so refreshing and not loaded with lots of fat. I just love it. If you use 1/2 head of cabbage then use 1/2 c. each of sugar and lemon juice. I add it to stirfries. Someone was just telling me that they like to shred it very fin and use it in making springrolls.
