Guest guest Posted October 16, 2007 Report Share Posted October 16, 2007 Broccoli, Tofu and Sweet Pepper Stir-Fry 2 tbsps. vegetable oil 1 tbsp. fresh chopped ginger 2 garlic cloves, finely chopped 1 medium onion, halved and sliced 1 medium head broccoli, top and stalk trimmed and cut into bit-size pieces 1 medium red bell pepper, seeded and cubed 1 medium yellow or orange bell pepper, seeded and cubed 454 gram pkg. medium-firm tofu, drained well and cubed 1 tbsp. sesame oil 1/2 cup cold water 1/2 cup teriyaki sauce mixed 1 Tbsp. cornstarch black pepper to taste Heat vegetable oil in a large skillet or wok over high heat. Add the ginger, garlic and onion and cook 30 seconds. Add the broccoli, peppers and onions and stir-fry 3 to 4 minutes. Gentle stir in tofu. Add sesame oil and water and cover and cook 2 minutes. Make a well in the centre and stir in teriyaki/cornstarch mixture and pepper and cook and stir until a sauce forms around the vegetables and tofu. Serve immediately. Makes 4 servings.
