I am shifting my eating away from beef and pork because of a kidney condition and problems with potassium. I am eating mainly seafood and a little chicken, but am looking to eliminate most animal protein from my diet to make it easier on my kidneys. (Trying to put off dialysis as long as possible.) One problem I have is that I can't have soy products. I am hoping that I will find recipes, ideas and suggestions from this group. On a personal note, I am a 4th grade teacher in Illinois. I have a college age daughter working on her master's degree in agriculture and a husband who builds bridges. I am 51 and it has taken me a LONG time to realize that my diet up until this time has not been conducive to staying off dialysis. Thanks!! Elaine Boardwalk for $500? In 2007? Ha! A lot of the recipies in the group here have tofu and temphe, but there are lots that don't. I personally love mushrooms, so I will use chunks of portabella in place of chunks of tofu in some recipies, or just omit it in others. Welcome to the group and I wish you vert good luck in your new eating style. You will love it.
