You might want to up the herbs or add a little salt if there is none listed, adjust the seasonings. I've had my cookbook since 1972 before I was vegetarian but we all ate vegetarian often, it was the hippie thing to do. We would all get together and cook from this cookbook, something like 20 of us, we cooked as Bob Dylan, Jimi Hendrix, Rod Srewart, or The Stones played in the background. I think every single one of us owned this book. It's still one of my top favourites (I now have the 2nd one too). I love most of the recipes that i've tried from these books and I still haven't tried alot of them. I think the cornbread in one of them is quite good. The herb bread is excellent with Italian food. The one I make over and over though is the Mushroom Stew; I made a few changes to suit my own tastes. I use regular onions instead of boiling onions, I use balsamic vinegar instead of red wine, oregano instead of thyme and I added green peppers. You can add tofu cubes to this as well, my mother insisted on this when I made it years ago (She's obsessed with protein). You can add a can of tomatoes instead of fresh too. Sometimes her directions seem a little unclear though, when I first made this recipe I left the roux separate and added it to the invidual bowls because I didn't see it mentioned again. She mentions tomato sauce though and she's actually talking about the roux. So I was a bit confused.
