Guest guest Posted October 13, 2007 Report Share Posted October 13, 2007 Ok, after looking at the kids files I have decided to try the Cuban Cigars, Untidy Josephs, and Mellow Yellow Bananas. I figure these all have a high probability of success and being well received. I figured for the Untidy Josephs I can mash the beans and blenderize the green pepper and any other offensive vege. Actually my kid is pretty good about eating veges, and she loves salads. She will eat lots of vege raw with Ranch dip! lol But the bean thing is definetly a hurdle. Maybe this will blast me out of my doldrums. I dont miss red meats, I miss 'knowing' how to throw a meal together fast. Lots of things are still unfamiliar. I really need to learn to cook grains, to be honest I haven't even heard of a lot of the grains out there. This group has been an education. Guest guest Posted October 13, 2007 Report Share Posted October 13, 2007 Hi Kandi, One of the things that helps me cook fast (because beans & grains are time consuming) is a tip I learned in here: precook & freeze things like rice & beans & grains in 1 cup measures or measures that match your recipes. I pulled some chickpeas out of the freezer this morning to make a big batch of hummus for work next week. I keep 4 cup bags of pasta sauce in the freezer & can pull that fast for pasta dishes & casseroles. My oh-so-picky nephew was over last weekend & we threw together personal pizzas - the only expensive part was the boboli crusts. Sauce came from the freezer, we grated cheese together & snitched some of DH's pepperonis (for the nephewperson's pizza). Dinner was on the table in 30 minutes including baking time. Side dish was chopped raw carrots & broc w/ ranch dressing for dipping. He liked it!
