I have the windows open, getting the house nice and cool so that it will hopefull stay cool enough that we won't need the AC by the time 80 gets here. It is dry humidity today so should be perfect! How do you cook a spaghetti squash? I've not bought them before. Earlier this week I cut two acorn squash in half, width wise and scapped out the seeds. Then I put them in a large deep bowl with a little water and covered with dinner plate and microwaved them until tender. Then I just used a spoon to scoop out the tender insides. Each person got their own half for their plate. I love it that way. Simple, nutritious and so delicious. Would love to hear your stuffed sugar pumpkin recipe too. I may make my Roasted Butternut and Carrot Creamy Soup. My daughters have been wanting it and I have all the stuff. It is so spicey and creamy......... May start bread in my bread maker too. That always makes the house smell great and it is so easy. I'm heading back to bed for a bit though...... Had terrible insomnia last night. Don't you just hate when you have that. Guest guest Posted October 13, 2007 Report Share Posted October 13, 2007 Get a Vornado (type of circulating fan) for your house!!! I haven't had to use the A/C in the 95 degree weather we have had. I swear by this fan. Check it out by doing a search. The one I got was about $50 at Wal-Marts. I have had to shut it off because it got it too cool in here!! I will just take the spaghetti squash and pierce it in a few places to let the steam out, put it in the oven for about an hour. Take it out. Cut it in half length-wise, clean the seeds out, take a fork and drag it along the squash, and it will automatically come out like spaghetti strands. I will then take some spaghetti sauce out of the freezer and put it over it. Delicious!!! And I will also sprinkle some parmesan cheese on it. At the same time, I will make up a batch of some sort of stuffing. I like cornmeal stuffing. Cut the top off the pumpkin (it is about 3 pounds), dig the seeds out, make the stuffing, and bake it. It will probably take about 1-1/2 hours at 350 degrees. Making a loaf of bread would top it off, and I can just put my bread machine to work. Now to figure out something green to go with it.
