Guest guest
This cake is _excellent_!!! I made it last night using golden beets (which I had on hand). My kids loved it -- I didn't tell them about the beets. My picky eldest (who wouldn't have eaten it had I told her it contained beets) thought it had a very rich flavor. She could taste the applesauce, but not the beets. My one mistake was that I tried out a vegan frosting recipe on top and it is very mediocre. Both kids asked me to use regular frosting next time. I suppose I could leave it off entirely. :-) This is VERY much like my favorite cake in childhood - Chocolate Applesauce Cake, but is " healthied " up a bit. So thanks, Angel!
