Asparagus and Orange Sauté

 

1 orange, peel and white pith removed

1 bunch asparagus

1 large clove garlic, finely chopped

1 tablespoon vegetable oil

2 teaspoons soy sauce

1/2 teaspoon sesame oil

1 tablespoon sesame seeds, toasted if preferred

 

Peel orange, removing bitter white pith. Cut orange sections from between

membranes, holding orange over bowl to catch juice. Set aside.

Gently snap each asparagus stalk at the bottom (it will break at the spot where

the woodiness begins). Discard woody ends; wash and dry asparagus. Slice on the

diagonal into 2-inch pieces. Finely chop garlic. Heat oil in a large non-stick

skillet over Medium-High heat. Add asparagus and garlic; sauté 5 minutes. Add

orange sections with juice and stir gently to heat through. Remove from heat.

Drizzle soy sauce and sesame oil over asparagus mixture right before serving.

Stir gently to coat and sprinkle with sesame seeds.

Yields 2 servings.
