I love them peeled and sliced like large french fries and then boiled in a little water, salt and smart balance light. Sometimes I mash them after they are cooked, but many times eat them in the french fry shape after they are cooked until tender. I've had them added to mashed white potatoes like Donna mentioned and it is good.
