Guest guest Posted October 11, 2007 Report Share Posted October 11, 2007 Vegetarian Chili 1 medium red bell pepper -- chopped 1 med green bell pepper -- chopped 3 carrots -- peeled and chopped 3 celery ribs -- chopped 2 medium onions -- chopped 4 large tomatoes -- chopped OR 2 cans whole tomatoes -- drained and chopped 1 can dark red kidney beans -- (15.25 oz) well drained 1 can garbanzo beans (chick-peas) -- (15.25 oz) rinsed and drained 1 can black beans (15.25 oz) rinsed and drained 2 tsp chili powder 2 tsp ground turmeric 2 tsp ground cumin 2 tsp marjoram salt and pepper In a 4-quart electric slow cooker, mix together the bell peppers, carrots, celery, onions, tomatoes, beans, chili powder, cumin and marjoram. Cover an cook on the low heat setting about 8 hours or until the vegetables are almost tender.
