Here's the recipe again for those who haven't seen it yet.

 

- I used organic potatoes and left the skins on. I wasn't sure if you

meant seasoned mashed potatoes, so I added a bit of rice milk and a tiny

bit of salt. I mixed it up but left some texture.

- Instead of a fresh tomato, I used a can of Muir Glen organic fire

roasted tomatoes. I cut them up, discarded the hard core, and used all

the sauce in the can.

- I water-sauted the onion and added the chili powder to that. (Raw

onions don't go over big around here.)

- I used parsley

- I used jack cheese

- I first toasted the cumin seed and ground it up

- I used DONNA'S FABULOUS chili powder which I always keep on hand (in

the recipe files)

- I omitted the red pepper flakes and the jalapeno
