Whole Wheat Maple Quick Bread - Hellenic Republic (TNT)

Note: Organic ingredients are recommended...

 

INGREDIENTS

1/3 c fat free milk

1 c fat free plain yogurt

1 egg, lightly beaten

1/2 c maple syrup (or less if desired)

2 lemon, juiced and peeled

2 c whole wheat flour

2 tsp baking soda

1 tsp baking powder

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

 

METHODS:

Preheat oven to 375F.

Grease a 5x9 inch loaf pan.

In a bowl, mix the milk, yogurt, egg, maple syrup, and lemon juice.

In a separate bowl, mix the flour, baking soda, cinnamon, nutmeg and lemon peel.

Gradually stir the flour mixture into the milk mixture until moistened.

Pour into the prepared loaf pan.

Bake 50 minutes in the preheated oven,

or until a knife inserted in the center comes out clean.

Take it out from the pan immediately and cool it on the wire rack.

Slices it to serve when it is completely cooled down.
