Cheesy Corn Rice Cakes

 

 

 

Ingredients:

1 cup dry whole grain brown rice, cooked according to package

directions

1 1/4 cup corn

1 cup shredded cheddar cheese

1 egg

Method

Mix rice, corn and cheddar cheese together. Salt and pepper to taste,

add egg. Form into small pancakes and pan fry on medium high heat in

vegetable oil for several minutes on each side until golden brown.

Serve hot, plain or with sour cream.

 

Notes: Cooking time: Rice approximately 1 hour (can be cooked ahead

of time and refrigerated). Frying time approximately 20 minutes.

 

Number of servings: Serves 4 people

 

I added a cup and a half of left over

cooked Broccoli to this it was Awesome!
