I made Yellow Submarine Soup

I just finished my *second* helping of Donna's Yellow Submarine Soup. Wow,

this soup was AMAZING. I don't cook much (trying to change that) and this is

the first recipe I've cooked in months. (Combination of laziness and moving

into a new house, lol)

 

This recipe was so easy and SO GOOD. I'm going to need to double up the

recipe next time. Does it freeze well?

 

Also, I made it on the stovetop this time and want to try the slow cooker

sometime. The directions say to " cook for hours on high " ...how many hours?

 

I found the recipe in the files, but thought I would copy it into my email

since it looks like it hadn't been posted since January.

Yellow Submarine Soup

 

2 onions, coarsely chopped

4 garlic cloves, crushed

2 cups yellow split peas

1/2 tsp. thyme (dried)

1 tsp. oregano (dried)

1 tsp. salt (use salt to taste when soup is done)

1/4 tsp. cumin

1 tsp. pepper

1/4 to 1/2 tsp. crushed red pepper flakes

6 1/2 cups vegetable broth

 

If making on the stove then saute the onion and garlic for a few minutes in

a tablepoon of olive oil until tender firm. Add other ingredients and bring

to a boil, reduce heat to a low simmer and cover pan. Cook for 50 minutes,

soup will be a nice rich thick soup. Salt to taste.

 

If using the crockpot I place everything in the crockpot and let cook for

hours on high and turn temp. to low for the last 1 or 2 hrs.

 

You can blend with a hand held blender if you like.

Well, do you ever get the feeling that the story's

too damn real and in the present tense?

Or that everybody's on the stage, and it seems like

you're the only person sitting in the audience?

I was looking for something to make tonight and decided your review of this was

a good reason to make it. LOL Thanks for the inspiration and to Donna for the

recipe. I used some green split peas since I didn't have any yellow ones. Hope

it tastes about the same. It will be thru cooking soon. Can't wait to eat it.
