However, ever since reading The China Study, I REALLY want to go vegetarian and maybe vegan. I just need lots of encouragement and ideas since my schedule is hectic and we are dealing with multiple health issues here. My oldest college age son has been very sick, and his diet is soooooo limited, so I am trying to work with that as well. A lot of you probably know how it is. Anyway, glad to be here. Actually, I follow Dr. Caldwell Esselstyn's program . . . basically Vegan however we do not eat any food with added oil of any kind. What has helped me is to organize a 3 ring binder with all the recipes I've found from books and this wonderful group. I stocked my pantry and freezer with all the nonperishable items I might need at any given time so each week I'm just buying the produce. As I try recipes, I make notes on the pages as to changes I wish to make next time. If the recipe is a bummer, I just rip it out. Dr. John McDougall's books also offer great recipes. Friday I made a Mexican Pasta Dish. Here is the recipe. It was delicious and next time I will add an extra can of beans. 1 c. chopped onion (simmer in saucepan w/water or veggie broth til tender) Add: 1 can (15/16 oz) Tomato Sauce 1 can Vegan Chilie 1 can Diced Tomatoes Simmer then cook 1 pound of your favorite pasta. Ours is spelt. Drain pasta, toss with all the sauce. Serve and top with grated soy parm. Enjoy! Hope this helps. I'll try to post other TNT recipes as I discover more great ones!
