Guest guest Posted October 6, 2007 Report Share Posted October 6, 2007 Cherry And Gooseberry Jam 2 lbs. red cherries 2 lbs. ripe gooseberries 4 lbs. sugar 2 lemons; juice of 1 tablespoon lemon zest Stalk and pit the cherries; top and tail the gooseberries. Simmer gently for about 25 minutes. Add the sugar and stir until dissolved. Add the lemon juice and zest. Bring to a soft boil and boil for about 15 minutes, stirring frequently. Gooseberry skins will become tough if boiled too rapidly. Test for setting, skim, and turn into hot jars and cover and seal, according to canning directions. Be smarter than spam.
