Guest guest Posted October 6, 2007 Report Share Posted October 6, 2007 Lentil Veggie Toss 1 cup uncooked lentils 2 cups water 2 cups cauliflower florets 2 cups broccoli florets 2 cups cucumbers, sliced and quartered 1 large carrot, grated 1/2 cup chopped red onion 2 cups sliced fresh mushrooms 1/2 cup sliced olives Garnish with some herbs or balsamic vinegar Place lentils and water in a large saucepan; bring to boil. Cover, reduce heat, and simmer 20 minutes or until tender. Drain well, and set aside to cool slightly. Toss lentils with the remaining ingredients, and serve. GArnish with some herbs or balsamic vinegar.
