Spicy Pear Butter

 

6 pounds pears

4 cups sugar

1/4 cup vinegar

1/4 cup water

1/4 cup lemon juice

1/2 cup orange juice

2 teaspoons cinnamon

1/2 teaspoon allspice

1/4 teaspoon cardamom

1/2 teaspoon nutmeg

1/2 teaspoon cloves

 

Peel and core pears, cut in quarters, and cook in

vinegar and water until tender.

Puree in blender or food processor in small batches.

Add juices and spices, and cook until thick. Seal in

prepared sterilized jars.
