I'm > sure somebody has an idea on what I can make with it Hey Rhoda, As I was reading my " Book of Whole Grains " by Marlene Anne Bumgarner I ran across a recipe for " Cooked Oatmeal Muffins " and I thought of you right away. 2 cups whole wheat flour 4 teaspoons baking powder 1 tsp salt 1 cup leftover oatmeal 1/2 cup milk 2 eggs 2 T honey 3 T oil or butter Stir together flour, baking powder, and salk, breaking up any lumps. Thin oatmeal with milk in large bowl. Beat eggs and add to oatmeal mixture, stir in honey and oil and beat well. Stir in dry ingredients, blending thoroughly. Pour into greased muffin tins and bake 25 minutes at 400 degrees F. Makes 1 dozen. ***They sound a bit boring to me so I would be adding spices and some raisins but at least its a base to start with. My dh managed to eat most of the leftover oatmeal afterall but this would be a good way to use it all up. I've been too busy to eat breakfast at home lately!
