Guest guest Posted October 1, 2007 Report Share Posted October 1, 2007 I just made a batch of this soup and it is delicious. I did make a couple of changes to the procedure. I sautéed the onions and garlic and then added the curry powder, the potatoes and chopped broccoli stems. I sautéed them for a while and then added the vegetable broth. We like chunky soups so I didn't add the broc florets until the potatoes and broccoli stems were cooked. I needed to add another cup of broth at that point but probably because I was overly generous with the broccoli. I cooked the soup for about 5 minutes to almost cook the florets and then picked most of them out before I whizzed the soup with my immersion blender. With the florets stirred back in, it looks beautiful. I did not add any milk. It tastes great and, with a glass of fresh carrot juice, will be our lunch today. Thanks so much for all the great recipes. I have quite a pile of them to try out now that the weather is cooler.
