Guest guest Posted September 30, 2007 Report Share Posted September 30, 2007 Greek Potatoes 4 to 6 medium sized potatoes 2 tbsps. butter 2 tbsps. olive oil 1 tbsp. lemon juice 1 tsp. dried oregano 1 tsp. dried parsley flakes 1 tsp. salt 1/4 tsp. fresh black pepper Peal the potatoes and cut into 1 1 1/2 " wedges. Heat the butter and oil in a large skillet. Add the potatoes and lemon juice. Saute until an even brown, turning potatoes to brown on all sides. Cover the skillet and continue to cook until the potatoes are tender, about 20 minutes. Uncover, sprinkle with seasonings, mix and serve.
