Curried Broccoli Soup

Curried Broccoli Soup

 

1 tbsp. butter

3/4 cup chopped onions

2 garlic cloves, minced

3/4 tsp curry powder

1/8 tsp. freshly ground pepper

2 cups vegetable stock

4 cups chopped broccoli

1 1/2 cups cubed potatoes

1 cup milk

 

In soup kettle, melt butter and sauté onions and garlic until tender. Add curry

powder, pepper, stock, and 2/3 cup water; bring to boil. Stir in broccoli and

potatoes. When mixture returns to boil, reduce heat, cover, and simmer until

vegetables are tender, about 20 minutes. Puree soup in batches in food

processor. Return puree to soup kettle, stir in milk and heat slowly.

Makes 6 servings.

aw another postive review for this soup. I have got to make it. I love curry

seasoning in things and this recipe caught my attention, especially since it is

a soup(one of my favorite one dish meals to eat year around, LOL)
